When I found this recipe, on my favorite site, www.justapinch.com , it was for orange cream cheese bread.
I did not have any oranges, juice or extract so I decided to alter the recipe and make it lemon, well poppy seeds are wonderful with lemon so I added that as well. Also, the recipe called for shortening and I use unsalted butter.
Here is my recipe, test, and loved by my family and friends.
Lemon Poppy Seed Cream Cheese Loaf
1 - 8 oz package of cream cheese, room temp
1/2 c butter, unsalted
1 2/3 sugar
2 1/4 c flour
1 tsp salt
1 TBSP baking powder
1 c milk (I do not use cow's milk but use Almond Milk)
zest of 2 large lemons
juice of 1 lemon
1 tsp poppy seeds
Cream the butter and cream cheese together until well mixed.
Gradually add the sugar and beat until light and fluffy.
Add eggs one at a time and mix well.
Combine flour, baking powder and salt, add to the creamed mixture alternately with milk, beginning and ending with the flour mixture.
Add zest, lemon juice and poppy seeds.
Pour batter into 2 greased and floured loaf pans, 8 1/2 x 4 1/2
Bake at 375 degrees for 65 minutes or until a toothpick comes out clean from the center.
Let cool in the pan for 10 minutes, remove to a wire rack and cool.
