July 7-8 weekend recipes

Hi folks, man was it a busy weekend. Everyone was home, plus a few extras and that always means lots of cooking! No complaints, I love it! And so do they, "the proof is in the eating" as my husband told me. No leftovers!

Let's see, first I made potato bread, then egg bread, then we had the Crock Pot Chicken a la Criolla . This was Friday. Saturday we had the Dorito's Casserole and on Sunday we had my Mexicali Skillet and Hodge Podge salad.

Later last night, I got to thinking about recipes, what I could tweak, what I could amp up and had a brain storm! And so was born, Pudding on Steroids! 

Hope you enjoy these as much as we did!

Dorito's Casserole (I thought I got this from Brandi but can't find it on her site)
1 bag of Doritos'
2 cups of shredded cooked chicken
1 can cream of mushroom soup
1 can cream of chicken soup
1/2 cup sour cream
1 cup milk
2 cups shredded cheese
1 can mild Rotel chilies

Combine the soups, sour cream,milk,Rotel and 1/2 the cheese, stir in the chicken. Prepare a 13 x 9 pan, crush several handfuls of Dorito's on the bottom. Pour the mixture in. Top with 1 cup cheese and more crushed Dorito's. Bake at 350 degrees for 30 - 40 minutes. Let it set up for a few minutes when you take it out. Serve with chips and a salad. 

As you can see, my gang loved it.

Fresh from the oven


Mexicali Skillet

1 cup pasta, your choice
1 TBSP plus 1 tsp taco seasoning
1 lb ground beef or turkey
1 can diced tomatoes
1/2 onion diced
1/2 cup frozen corn
1 can beans (your choice)drained
1/2 bell pepper diced
1 cup shredded cheese (optional as a topper)

Cook meat, onion and bell pepper with taco seasoning, add 1/2 cup water or broth, add in all other ingredients except for the cheese. Cover and simmer until the pasta is done. Serve with sour cream, guacamole, salad or eat alone.

My guys love this one! Quick, easy and filling.

Hodge Podge Salad

1 diced yellow squash
1 diced zucchini
2 diced tomatoes
1 diced onion
2 diced cucumbers
1/2 cup shredded carrots
1 diced bell pepper
All ingredients go into a large bowl, add 1/3 - 1/2 cup of your favorite dressing, I used house Italian. Stir well and refrigerate for 2 hours and serve.
A crowd pleaser and great for potlucks, picnics, hot nights when you need a cool side.

And last but not least, my new creation! Pudding on Steroids!

Pudding on Steroids

1 box instant French vanilla pudding
1 box instant chocolate pudding
1 small containers Cool Whip
2 cans Sweetened condensed milk
4 bananas, sliced
1 cup coconut flakes
1 box vanilla wafers
2 3/4 cups cold water, divided

You will need 2 bowls, one for each flavor of pudding and a trifle bowl or large bowl for the finished product.

Mix the french vanilla pudding, 1 can of SCM and 1/2 the water into a bowl. Fold in 3/4 of a small container of cool whip. Slice and add the bananas to this mixture. Set this aside.

Mix the chocolate pudding with 1 can of SCM and 1/2 of the water into  a bowl. Fold in 3/4 container of cool whip. Fold in 1 cup of coconut flakes. set aside.

In a trifle bowl, I used my Pampered Chef, trifle bowl for this pudding. Layer the bottom with wafers and add crushed to fill in the gaps. 
Now in layers: french vanilla with bananas
wafers
chocolate with coconut
wafers
Continue until all the pudding is used and the bowl is full. Now top it off with the remaining Cool Whip.
Add a few crushed wafers for garnish.
Allow this to sit in the fridge over night.

WOW

Pudding on Steroids! My husband flipped over this! Now it is not for the faint of heart or non-sugar eating person.
