Beef and Broccoli Crock Pot Style

Hi, I hope everyone had a wonderful safe 4th. My husband had to work, the boys were gone and I experimented with new recipes. Some were good and one not so much. As my dh put it, the concept was great, the outcome not.


Our family loves Asian food and I am forever trying something new. The problem lies with the fact that my dh can't eat 'tough' meat or anything chewy. Sometimes stir fry will be tough, cheap meat, wrong cut, that sort of thing.


I decided to try fixing beef and broccoli in the crock pot. This was a great idea, worked out well and tasted fabulous!


Now you can take this same recipe and stir fry if you like, but in the crock pot, there is not stirring, no standing over a hot stove and at the end of a long day you remove a lid and enjoy! Simple goodness.


Beef and Broccoli Crock Pot Style


1 lbs of beef cut into strips
1 lb broccoli florets
1 onion cut into wedges
2 cups broth
1/4 cup soy sauce
garlic, 1 tsp or 1 clove of fresh
1 tsp ginger
pepper
2 TBSP red roasted chili paste
2 tsp sesame oil


1 TBSP cornstarch
2 TBSP water


In a crock pot put all the seasonings, oil and broth. Add the sliced beef and give it a good stir. Let this cook on low for 4-6 hours.
30 minutes before you are ready to eat, cook your rice, add the broccoli to the crock, also add the cornstarch to the water and add to the crock to thicken the broth.


This recipe has 308  calories per serving, counting the rice and a total of 8 WW points with the rice. serves 6. The beef and broccoli have 3 pts.
