As you can tell, we eat a lot of chicken. Due to my health I do not eat pork and am on a restricted diet as far as red meat is concerned.
I am always on the lookout for new recipes. We love chicken Parmesan but it is a lot of work. So when I found this recipe, I knew this would be a keeper.
Now i added penne pasta and more sauce to the recipe but you can omit those if you like.
Here is my version.
Chicken Parmesan Bake
2 TBSP olive oil
2 garlic cloves OR 2 tsp garlic powder (more if you love garlic, less if you don't)
6 whole chicken breast (boneless/skinless for less work)
1 1/2 jars of Garden Combo Chunky spaghetti sauce
1 tsp dried basil
8 oz shredded mozzarella cheese
4 oz grated Parmesan cheese
5 oz croutons, Italian herb
1 cup penne pasta (you can precook the pasta to cut down on baking time or add it dry but then add 1 cup of water to your mix)
Cut the chicken breast into bite size pieces or 1 inch cubes. Saute in the olive oil. In a large bowl add in all ingredients EXCEPT the mozzarella cheese and stir well.
Pour this into a 13 x 9 baking dish and top with the mozzarella cheese.
If you use uncooked pasta you will need to bake this for about 35-45 minutes on 350.
If you use precooked pasta or no pasta, then everything else is cooked and all you really need is to melt the cheese until the top is a gorgeous golden color.
Serve with a salad and fresh fruit. What a great meal!! And it is so much easier than how I was fixing chicken parm before!
